Panini. well, sortof....

I love trying to come up with cheap easy meals. The following was not really either. Yesterday we had my newly returned missionary brother Steven over for a dinner appointment. What better way to unveil a new dish then to someone with an Iron stomach developed on a mission. This "cheap" meal cost $20.00 and made 8 verry filling paninis (even for a fat guy like me). And its first run was not so easy because I wasnt sure how to bake it so I used a pan with the bottom a 2nd pan on top, a George Forman, and a GT Express. In the end I found a forman for 2-5 min to give it the grill marks and then baking at 350 for 15 min is best.... so far.
There are also 2 versions of this recipe. The bad one and the good one. The good one was created out of the leftovers from yesterday (there were tons) and the ingrediencts will be marked with a "*" so you can see the process. Also note: THESE ARE DISGUSTING WITHOUT THE SPAGETTI SAUSE! I never actually used chicken or meatballs in it yet but it sounds like a winner.

What you need...
-Pesto
-sliced motserella
-Rhodes dinner rolls
-sliced tomato
-salt and pepper
*-spagetti sause
*-great value meat balls or boneless skinless chicken (still good if you leave these out)

How you make it...
-I used 2, 1/4 rolls for the top and bottom of the panini, (total of 4, 1/2 rolls per panini) but you can make whatever size you want. The only thing taht matters here is you dont let them raise and you smash them as flat as you can.
-I put about 1, 1/2 to 2 bpoon fulls of pesto on the top and again on the bottom rolls, followed with motserella cheese to cover, and then tomato. then the salt and pepper, meatballs cut in half or cooked chicken and spagetti sause. grill and bake as outlined above and your done!! As an after thought for today I realize thatletting the dough raise may work out better and use less dough, so if you try it please comment on how that went.
